4. Remove the sterilized jars from the hot water one at a time, tilting to empty. To make sure they are completely drained, turn them upside down on a clean towel on the countertop. Turn right-side up and fill quickly with jelly mixture, leaving ΒΌ inch of head space. Wipe the sealing surface of the jars with a clean paper towel dampened with hot water to remove any of the mixture or sugar crystals. Work quickly to ensure that the filled jars stay as hot as possible until all are filled and ready to load into the canner for processing. Adjust lids.
5. Load the jars into the canner one at a time, using a jar lifter. Make sure to keep the jars upright at all times; tilting may cause the mixture to spill into the sealing area of the lid, which should remain clean and undisturbed. The water in the canner can be close to boiling when the jars are added, if the mixture has remained hot all the while.
6. Turn the heat under the canner to its highest setting, cover the canner with its lid, and heat until the water boils vigorously. Then boil 5 minutes (altitudes of 0 to 1,000 feet). Butters and honey must be boiled for 15 minutes unless otherwise instructed (again, altitudes of 0 to 1,000 feet). The water level in the canner should be 1 to 2 inches above the tops of the jars and must remain boiling during the entire 5 (or 15) minutes of processing. Keep the flame high and the lid on.
7. When the jars have been processed in boiling water for the recommended time, turn off the heat and remove the canner lid. Wait 5 minutes. Remove jars from the canner using a jar lifter, again making sure to keep the jars upright. Place them on a towel or cooling rack, leaving at least 1 inch of space between them. Do not place jars on a cold surface or in a cold draft.
8. Cool jars upright for 12 to 24 hours to make sure they properly seal and that the mixture sets. Let the jars sit undisturbed during this time. Do not tighten ring bands on the lids or push down on the center of the flat metal lid until the jar is completely cooled, as this may cause seal failures.
